For the first time in my writing career I am posting a recipe, an easy one, something really close to my heart and a dessert I crave since eternity! Shahi Phirni – Creamy rice pudding flavored with saffron and cardamom! Why Shahi? Because plain Phirni is too mainstream! So here’s presenting a simple recipe of the rich, creamy, pasty and dense Phirni.


Tukda Rice – 100 grams
Milk – 2 Liters
Sugar – 200 grams
Green Cardamom powder – 25 grams
Saffron and dry fruits for garnishing


Drain and grind the rice to a coarse paste. Bring milk to a boil; add rice paste dissolved in a little water or cold milk. Cook till rice is completely cooked, stirring constantly. Add sugar and cardamom powder and cook until sugar is completely dissolved. Pour into earthenware and garnish with dry fruits and saffron. Refrigerate for an hour before serving!
